Job Description:
Executive Pastry Chef FUNCTION: Responsible for the supervision
and day-to-day operations of the Bakery, including the preparation
and production of all pastry, bread, and dessert items. Complete
the administrative functions of the department. RESPONSIBILITIES:
Demonstrate strong leadership qualities with attention to detail in
elevating and sustaining a competitive edge. Accountable for the
quality and consistency of all bakery products produced and served.
Work directly with the Executive Chef on creation, development and
implementation of new desserts and creative menu developments in
all Nugget outlets. Coordinate all daily orders of supplies to the
bakery. Responsible for shipping, storage, and rotation of bakery
products. Manage waste control, quality control, plate
presentations, production methods and sanitary conditions. Prepare,
form and or cook dough's, batters, breads, rolls, sponges, cakes,
pies doughnuts, sweet yeast goods, pastries, laminated dough's,
candies, and cookies. Prepare syrups, sauces, jellies glazes and
marzipan. Make and apply fruit fillings, butter creams icings,
pastry creams, and Bavarians. Prepare parfaits, bombes, coupes, ice
creams and sorbets. Decorate and serve pastries, desserts, cakes
(including wedding cakes), temper chocolates and create show
pieces. Demonstrate hands-on approach to all bakery products
produced in the bakery department ensuring quality, presentation,
and consistency standards meet the Nugget expectation. Assist with
the development of standardized recipes for all menu items,
ensuring recipes are accurate and updated as needed. Ensure all
food products prepared meet the established specifications and
standards. Ensure proper levels of bakery and pastry products are
prepared based on forecasted needs. Assign tasks for the efficient
use of allotted labor ensuring, maximum results are achieved, and
daily production needs have been met in a timely, organized, and
efficient manner. Responsible for the set-up, cleanliness, and
organization of the bakery department. Maintain industry knowledge
and trends in the world of pastry and baking. Prepare pastries,
desserts, and breads for all Nugget outlets. Recommend measures to
improve production and service methods, equipment performance,
scheduling, and quality control. Make suggestions regarding ways to
improve in the working conditions and use of equipment to increase
efficiency. Communicate variance of standards to the Executive
Chef. Assist the Executive Chef with the annual budget process and
makes recommendations for improvement or cost savings. Attend
meetings and trainings as required. Ability to multitask and work
within specific time constraints. Make responsible decisions with
ownership and accountability. Sets goals for bakery staff and
measures performance. Hire coach and train bakery staff. Complete
or approve bi-monthly observations and annual reviews as necessary.
Using the Nugget's system of recognition, recognize team members
who are going "above and beyond." Knowledgeable of and consistently
follow Nugget policies and procedures as well as appropriate local,
state, and federal regulations. Perform work in a safe manner and
always maintain a safe environment for fellow team members and
guests alike. Immediately report unsafe conditions, team member or
guest incidents to Security, Management, and the Safety Manager.
Always maintain a positive and professional image for the Nugget
when performing duties or representing the Nugget and encourages
others to do the same. Regular predictable attendance is required.
Other duties and responsibilities as assigned. REPORTING
RELATIONSHIP: Executive Chef MINIMUM REQUIREMENTS: Must be at least
21 years of age. EDUCATION LEVEL: Associates degree or equivalent
from a 2-year college or technical school, or a combination of
education and experience is required. LANGUAGE: Effectively
communicate with others both verbally and in written form using the
English language. EXPERIENCE: Minimum 3 years as a Pastry Chef in a
high volume, multi-outlet hotel, restaurant, or casino with a
centralized pastry production kitchen required. SPECIAL SKILLS:
Proficient in the use of Microsoft Office, Word, Excel, and
Outlook. LICENSE/CERTIFICATION: Certified Food Management
Certificate required. PHSYICAL DEMANDS AND WORK ENVIRONMENT:
Ability to walk, stand, or sit for long periods of time. Ability to
lift, and move product up to 50 lbs. Fine finger manipulation. Work
environment may include smoke and variable temperature, lighting,
and noise levels. Work may be performed indoors and outdoors during
special events. Employment Type: Full Time Years Experience: 3 - 5
years Salary: $70,000 - $80,000 Annual Bonus/Commission: No
